Jun Shan Yin Zhen
Also known as Junshan Yinzhen, Junshan Silver Needle
A yellow tea from Junshan Island in Dongting Lake, Hunan, made only from buds. Its buds look like those of the white tea Silver Needle, but it is processed differently: made like green tea, then repeatedly kept warm in a closed space until the buds turn yellowish. This takes away the grassy edge of green tea.
Taste
Mellow and brisk, without the grassiness of green tea
How we brew it
80 °C, 3 g per 200 ml, 2–3 minutes.
Our personal recommendation – adjust it to your taste.
Cultural background
It is one of China's rarest teas. Strictly, only tea from the island itself may carry the name, yet many teas from around the lake are sold as Jun Shan Yin Zhen.
